Ingredients

SALAD

  • 3 cups seedless watermelon | cut in 1-inch cubes
  • 8 ounces feta cheese | crumbled
  • 6 cups baby arugula | washed and spun dry

VINAIGRETTE

  • 1 ¼ cup extra virgin olive oil
  • ¼ cup freshly squeezed lemon juice, , about 2 lemons
  • 1 teaspoon Maison Gabrielle’s Pink Himalayan Salt
  • 1 teaspoon of Maison Gabrielle’s Oregano
  • 1/2 teaspoon Maison Gabrielle’s Dried Dill
  • 1/2 cup to 1 cup of Maison Gabrielle’s Dried Mint Leaves.
  • Freshly cracked Maison Gabrielle’s Black Peppercorns | to taste

Directions

MAKING THE DRESSING

  • Whisk together the lemon juice, salt, black pepper and oregano.
  • Slowly pour in the olive oil, whisking constantly till is emulsifies.
  • Once thoroughly mixed, add the dried mint mix lightly till covered and let sit for 3-4 minutes or until the leaves are fully soaked in the mixture and soft. then lightly mix again.

MAKING THE SALAD

  • Place the arugula, watermelon, feta, and mint in a large bowl.
  • Drizzle with your desired amount of the dressing to coat the salad lightly and toss well.
  • Add freshly cracked Maison Gabrielle’s Back Peppercorns to taste if desired. (this adds a nice warmth to the salad that combines well with the acidity of the salad
